Hotel Haarhuis opens restaurant with Arnhem's first Vertical Farm
Arnhem, 10 December 2021 - Today, the new restaurant LOCALS opens in Hotel Haarhuis! The new restaurant concept of this well-known hotel in Arnhem will work with Dutch Cuisine in a sustainable and modern way. Old Dutch food, but surprising, responsible and culinary prepared.
Restaurant LOCALS stands for local products ánd people. The kitchen team here goes for high-quality dishes in which vegetables play the leading role. With their own Vertical Farm and locally sourced products, they present the best of Dutch soil, but in a surprising, responsible and culinary way. ‘We want to distinguish ourselves from other restaurants in town,’ says director Wouter Dekker of Hotel Haarhuis, where LOCALS is located. ,,So no Mediterranean or Oriental cuisine, but dishes based on well-known Dutch products.’ And the Dutch products do not come from far away. In cooperation with the company Vegger from Ede, the hotel has built its own Vertical Farm in which vegetables and herbs are grown.

In the kitchen of LOCALS, chef Frank Bregman is at the helm. Before making the switch to LOCALS restaurant, Frank gained experience at restaurants Oud Sluis and Sergio Herman's Pure C, and had his own Bib Gourmand restaurant in Renkum. He developed his passion for cooking with vegetables thanks to LOCALS restaurant ambassador, the vegetable chef of the Netherlands Niven Kunz. Niven is a Dutch chef who was awarded a Michelin star at two different restaurants and now has his own restaurant called Triptyque. Niven stands for the 80/20 principle (vegetables vs meat/fish). In his kitchen, vegetables always come first. His passion and knowledge about vegetables have flowed into LOCALS and you can taste this in the tasty dishes. Frank Bregman says: ‘When coming up with the dishes, we first started with the vegetables of the season. Then we looked at what kind of meat or fish would go well with the vegetables. Normally, it's the other way round. We give vegetables a starring role and let it shine in our dishes’.
Vertical Farming Restaurant LOCALS grows its own vegetables and herbs in a Vertical Farm. Vertical Farming is growing food in stacked growing layers, in a fully controlled environment. Energy, light and water are controlled to grow as efficiently and sustainably as possible, without outside influences. The crops grow entirely on water, using no soil. The LOCALS restaurant's greenhouse includes several varieties of basil, lettuces, coriander, oregano, endive and beetroot sprouts. A unique way of growing vegetables and herbs in Arnhem!
